Food safety is the field that regulates the relationship between foodstuffs, materials in direct contact with food, the food chain and the provision of services in trade and catering. It is also the area that establishes guarantees for the protection of human health provided by the state and protection against harmful and hazardous effects of foodstuffs and substances in direct contact with foodstuffs.
The main goal of regulation of the sphere is to protect public health from the possible harmful effects of food products (according to the principle "from farm to table" or "from field to table"), as well as to ensure food safety at the stages of production, storage, transportation, processing, sale, production and trafficking or to ensure state control at the stages of the food chain using the principle of traceability and other key issues.
The task of food safety is to guarantee the safety of life, human health and the environment in operations at all stages of the food chain.
